Levain build at 1:1:1 Autolyse 2 hours Mix in levain, rest 30 mins Mix in salt, rest 30 mins Bench fold, rest 30 mins Laminate cocoa paste, hazelnuts and chocolate, rest 30 mins 4 coil folds, rest 30 mins between each fold Shape Total Bulk Fermentation 6 hours Retard 14 hours Bake at 485F for 25 mins lid on, 470F 15 mins lid off
